pasteurized milk curd and whey mixture curd and whey 25°÷30°С cooled finished product 8°÷10°С
The milk which has been standardised and pasteurised at 72°to74°С and cooled to the technologically required temperature for a short or prolonged process, is fed into the DONI®O Vat /1/ from the milk treatment sector. The ready coagulum is cut length and crosswise into cubes with sizes from 8 mm to 12 mm depending on the quality of the milk. After this the temperature is gradually increased to 40°-45°С while stirring continuously until a stable protein grain has formed. The curd-whey mixture is transported with a volumetric pump through DONI®Therm/2/ to cool to 27°- 30°С.
The cooled mixture goes into DONI®Coolmatic/3/, where 90% of the liquid is drained on the first drainage conveyor belt. The final draining is completed with the following four conveyor belts, after the product has been turned four times. Cold air with a temperature of minus 2°С circulates in DONI®Coolmatic/3/ which cools the product to 10°С over a period of 1 hour. The process is continuous with production capacity of 1 500 kg/h.
The finished product is transported to the packaging sector where it is packed in packaging chosen by the client.
The cleaning is centralised and performed with DONI®Pro CIP/6/.
The 24 hr production output of the sector can reach 30 000 kg finished product, depending on the number of DONI®O Vat/1/ and the capacity of the packaging equipment.
This production method is suitable for medium and large dairy factories and it is offered with HLA /high/ level of automation.
