Typical representatives of this group are: camembert and brie which are covered in white mould created by Penicillinum camemberti and Penicillinum candidum.
Blue cheese is another typical product containing blue mould created by Penicillinum roqueforti. The most famous representative of this group is the cheese Roquefort which is made from sheep milk.
Cheese in brine: Bulgarian white cheese in brine, feta, brinza, telemea etc. also belong to the group of soft and semi soft maturing cheese. What is typical about them is that the process of maturing and storing occurs in the packaging which is filled with brine.
They are preferred in Europe and Central Asia.
