Moulded tvorog
The moulded tvorog is a soft non-maturing (fresh) cheese. It is ready for consumption immediately after completion of the manufacturing process. It is a protein grain which is offered on the market in different shapes and sizes /a wedge, cylinder, parallelepiped/ with a weight from 100 to 500 g. It is packaged in a vacuum or inert gas environment.
The yield is between 11% and 15% depending on the casein and fat content of the milk. Its colour is white to pale yellow. It has a sour milk taste with a light creamy aftertaste.
The grain is manufactured in DONI®Double O Vat module and it comes out in different sizes. I It is moulded immediately after draining while still warm. After that it is cooled and packaged.
Depending on the quantity, the type of starter culture and the coagulation temperature, the technological process can be classified as follows:
- short, with a coagulation temperature of 32°-34°С and a duration of 6-8 h;
- prolonged, with a coagulation temperature of 22°-23°С and a duration of 10-12 h.
The characteristics of the finished product are:
- moisture content of 65 to 80% depending on the fat content;
- fat content from 0 to 18%;
